QUICK RASPBERRY ICE
Yield: 2 servings (makes 1 cup)

INGREDIENTS
- 2 cups frozen unsweetened raspberries
- 1 tablespoon raspberry or cassis liqueur
- Mint sprigs
DIRECTIONS
Place the frozen raspberries and liqueur in a blender or food processor.
Process until thick and slightly chunky, scraping down sides as necessary.
Serve immediately while still frosty. Garnish with mint sprigs, if desired.
